Mashed Golden Yam
Ingredients:
- 1 (20 oz) can POLAR Golden Yams – drained
- ¼ cup POLAR Coconut Milk Lite
- ½ tsp ground ginger
- Pinch of salt
- Garnish: rosemary sprigs
Directions:
1. Place the drained golden yams and coconut milk in a small saucepan over medium-low heat.
2. While the yams are heating, mash and stir them with a wooden spoon until you reach your desired consistency.
3. Stir in the ground ginger and salt.
