Mashed Golden Yam

Ingredients:

- 1 (20 oz) can POLAR Golden Yams – drained

- ¼ cup POLAR Coconut Milk Lite

- ½ tsp ground ginger

- Pinch of salt

- Garnish: rosemary sprigs

 

Directions:

1. Place the drained golden yams and coconut milk in a small saucepan over medium-low heat.

2. While the yams are heating, mash and stir them with a wooden spoon until you reach your desired consistency.

3. Stir in the ground ginger and salt.

4. Remove the saucepan from heat and serve the Golden Yam Mash immediately, garnished with rosemary sprigs.
