Lemon Coconut Cake
What ingredients do you need?
To make this delicious Coconut Lemon Cake, you will need the following
ingredients:
- 2 1/4 cup flour
- 3/4 cup granulated sugar
- 1 tbs baking powder
- 1/4 tsp salt
- 1 tbs lemon zest
- 3/4 cup sweetened coconut
- 2 tbs vegetable oil
- 2 eggs
- 3/4 cup POLAR coconut milk
- 1/4 cup lemon juice
- Diced pecans (optional)
How do you make it?
1. Preheat your oven to 350 degrees F and grease and flour your pan. Alternatively, you can use PAM for baking.
2. In a medium bowl, beat the oil, eggs, and milk until frothy using an electric mixer. Set the mixer aside and stir in the lemon juice by hand.
3. In another medium bowl, combine the dry ingredients (flour, sugar, baking powder, salt, lemon zest, and coconut).
4. Pour the wet ingredients into the dry ingredients and stir by hand until just combined. Add diced pecans if desired.
5. Spoon the batter into the prepared pan and bake for about 50 minutes to 1 hour, or until a toothpick inserted into the center comes out clean.
6. Once baked, allow the Coconut Lemon Cake to cool before slicing and serving.
