Discover the joy of homemade goodness with our Corned Beef & Spinach Strata recipe—a timeless favorite for any occasion.
Materials & Appliances Needed:
- 8x8 Pan
- Knife
- Chopping board
- Frying Pan
- Measuring cups & spoons
- Bowl & whisk or utensils for mixing
- Spatula
- Foil
- Refrigerator, Stove & Oven
Ingredients Needed:
- 1 can of 15oz Ox & Palm Corned Beef, Original Chunky Style
- 8oz Shredded Cheese (mild cheddar or a cheddar & Monterey Jack Combination)
- 2 cups of milk
- 8 slices of bread
- 5 large eggs
- 8oz spinach (you may use packaged frozen spinach, just make sure it’s thawed & the excess moisture is squeezed out.)
- 1 small onion
- 2 tablespoons butter
- 1 teaspoon (or to taste) salt (divided)
- ½ teaspoon (or to taste) of black pepper (divided)
- A pinch of nutmeg (or to taste)
- 2 tablespoons of mustard (your preference)
- Lemon &/or hotsauce of your choice (not necessary)
Steps:
- Gather ingredients
- Finely chop the onions
- Heat the butter over medium-low heat & sauté the onion until tender. Stir in ½ teaspoon salt & ¼ teaspoon pepper, then mix in the spinach, corned beef, and a pinch of nutmeg. Mix well so that everything is well blended. Set aside
- Cut the 8 slices of bread into 1-inch cubes. Sprinkle a layer of bread cubes over the bottom of the 8x8 baking pan, then sprinkle a layer of the beef & spinach mixture you had set aside earlier, & then sprinkle a layer of cheese. Repeat the process until all ingredients are used up.
- Now, whisk together the 2 cups of milk, eggs, and mustard along with the remaining salt & pepper until smooth
- Pour the mixture over the casserole. Pat the top so that the bread is submerged. Cover the pan with foil and allow it to refrigerate for about 8-24 hours.
- Remove the strata from the refrigerator for about 20 minutes & pre-heat your oven to 350°F
- Once your oven is heated, bake the strata, uncovered for about 45-60 minutes or until the top is golden brown and cooked through. (if check the strata occasionally to make sure that it is not burning too quickly. You may carefully and lightly cover your pan with foil if you notice it browning too quickly, but make sure you remove the foil in the last 5 minutes or so.)
- Let stand for 5 minutes before serving. You and your guests can squeeze a little bit of lemon juice over the warm strata and a little hot sauce of preference if you like a bit of tang and kick to your meals. Enjoy!
