Position your oven rack in the upper portion of your oven. Preheat to 500 F or however high your oven goes for at least 30 minutes before baking.
In a skillet, melt butter with your seasonings (basil, oregano, thyme, fennel, and red pepper flakes). Add garlic and cook until the garlic is golden and crisp (3-4 min). Pour garlic butter out of the skillet into a small bowl and set aside.
Using the same skillet over medium heat, add olive oil, baby spinach, salt and pepper. Cook until spinach is wilted and excess moisture has released.
Lightly flour a clean work surface. Lightly shape your dough into a ball shape and then roll it out thinly until it reaches 12 inches in diameter. We were able to make 2, 8 inch pizzas from our dough.
Place pizza dough onto a lightly oiled sheet pan, or cast iron skillet if you don’t have a pizza pan.
Spread on garlic butter, spinach, and cheese. At the very top, arrange the artichoke hearts. We recommend keeping them as whole quarters.
Bake for 15 minutes, rotating the pizza at 10 minutes. The pizza is done when the crust is golden and cheese has melted.
This is the kind of pizza that you won’t be seeing leftovers the next day from!
